Ingredients:
- 1 pound fresh white fish
- 1/2 cup dry white wine
- 1/4 cup olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 teaspoon dried thyme leaves
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- Fresh parsley leaves
- lemon wedges
Instructions: 1. Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish with butter. 2. Place the fish in the prepared baking dish. In a small bowl, whisk together white wine, olive oil, butter, garlic, thyme, salt and pepper; pour over fish. 3. Bake for about 20 minutes or until the fish is easily flaked with a fork. Garnish with parsley leaves and lemon wedges before serving.

- Preheat oven to 400 degrees F (200 degrees C). Cut 2 pieces of parchment paper about 18 inches (45 cm) square. Place fish in the center of each piece. Squeeze fresh lemon juice over the fish. Drizzle with olive oil and sprinkle with garlic, oregano, salt, and black pepper. Fold each piece of parchment paper over the fish, making a half-moon shape. Crimp the edges together well so that the parcels are well sealed. Place on a baking sheet and bake for 12 to 15 minutes, until the packets are just cooked through.
